Make instant ice cream with snow and different flavors such as lemon, mint, cinnamon and vanilla! You can even dye the vegan snow ice cream naturally blue with butterfly pea tea!

Making ice cream with freshly fallen snow is such a fun winter craft! All these 5 snow ice creams are dairy-free, egg-free and vegan. But if you eat dairy you can substitute milk for soy milk – it works just as well.

Lemon and mint chocolate chip snow ice cream were my favorites – because lemon and mint are my favorite ice cream flavors πŸ˜‰ – but all 5 vegan snow ice cream recipes are delicious!

Vegan Lemon Snow Ice Cream

This lemon ice cream is one of the best ice cream I ever had! It tastes just like lemon sorbet which is made with syrup, lemon juice and rind and egg whites. But this lemon snow ice cream is much quicker to make! Besides it’s vegan! All you need for the vegan lemon snow ice cream is snow, lemon juice and sugar.

Ingredients:

  • 4 cups snow
  • 1/4 cup (4 tbsp) fresh lemon juice
  • 4 tbsp sugar

Directions:

Combine lemon juice and sugar in a cup and stir until the sugar is dissolved. Put the lemon syrup into the fridge for some minutes to cool. Then put the snow into a large bowl and stir the lemon syrup into the snow. Eat the lemon snow ice cream immediately or put it into the freezer. Vegan lemon snow ice cream freezes well!

Vegan Vanilla Snow Ice Cream

The vegan vanilla snow ice cream tastes just like ordinary vanilla ice cream and has a good consistency!

Ingredients:

  • 3 – 4 cups snow
  • 1/2 cup soy milk
  • 1/4 cup homemade vanilla sugar

Directions:

Whisk together soy milk and vanilla sugar until the sugar is dissolved. Let the vanilla milk cool down in the fridge for about 10 minutes. Put the snow into a large bowl and stir in the vanilla milk. Add more snow if the vanilla snow ice cream is too liquid. Eat the snow ice cream immediately or put it into the freezer.

Naturally Blue Snow Ice Cream – Vegan

A fun twist on traditional snow ice cream – nobody will believe that this blue ice cream is naturally dyed blue with butterfly pea tea!

Ingredients:

  • 3 – 4 cups snow
  • 1/2 cup soy milk
  • 1/4 cup homemade vanilla sugar
  • 1 bag butterfly pea tea
  • boiling water

Directions:

Cover the butterfly pea tea with boiling water and let it steep for 10 minutes. Then remove the tea bag. In a cup, stir together soy milk, vanilla sugar and about 2 tbsp butterfly pea tea. Put the naturally blue milk into the fridge until cool. In a large bowl, stir together snow and naturally blue milk. Eat the naturally blue snow ice cream immediately or put it into the freezer.

Vegan Cinnamon Snow Ice Cream

Cinnamon snow ice cream – a perfect ice cream for cold winter days!

Because the snow was too wet on the day I made the ice cream, it was more like cinnamon granita – but feel free to top it with a whipped cream substitute for a delicious dessert.

Ingredients:

  • 4 cups snow
  • 1 tbsp cinnamon
  • 4 tbsp powdered sugar
  • optional: 2 – 4 tbsp oat or soy milk

Directions:

In a cup, mix together cinnamon and sugar until well combined. Then stir in the snow.

Mint Chocolate Chip Snow Ice Cream – Vegan

This vegan mint chocolate chip snow ice cream is so delicious – it will have everyone screaming for more!

  • 4 cups snow
  • 1/2 cup sugar
  • 1/4 cup soy milk
  • 4 – 6 drops essential peppermint oil
  • 2 oz (55g) chocolate – I used baking chocolate because it’s vegan and cheap
  • 1 tbsp neutral oil (like sunflower oil)

Directions:

In a small saucepan, combine chocolate and oil and melt it over low heat.

Whisk together soy milk, sugar and essential peppermint oil. When the sugar is dissolved, add snow and stir until combined.

Pour the melted chocolate in a thin stream over the vegan mint snow ice cream.
