General Tso's chicken is a sweet deep-fried chicken dish that is served in North American Chinese restaurants. The dish is named after Zuo Zongtang (also romanized Tso Tsung-t'ang), a Qing dynasty statesman and military leader, although there is no recorded connection to him nor is the dish known in Hunan, Zuo's home province.

A dish made of deep-fried batter-coated pieces of chicken that are cooked in a sweet, tangy, and sometimes spicy sauce.Some vegetables commonly served.

Even this dish is so popular in US, you might be surprised to learn that General Tso’s chicken is actually not very big in China — and it doesn’t even originate from mainland China. In fact, it hasn’t even been around for long: Its creation is widely credited to Peng Chang-kuei (who recently died) in 1952.

And for my weekend meal, I make this easy yet tasty General Tso's Chicken. As an Asian, once in a while, I need to spoil my taste with something that reminds me of home.

General Tso Chicken Recipe

Serve: 3-4 shares

Ingredients:

For fried chicken
🥣 400 gr chicken meat (thigh or breast), cubes
🥣2 tsp soy sauce
🥣pinch of white/ black pepper powder
🥣1 egg ( or ¼ cup leftover egg white), lightly beaten
🥣½cup flour
🥣½cup tapioca/cornstarch flour
🥣1 tsp baking powder
🥣pinch of salt

🥣Enough cooking oil for deep fry

Making fried chicken

1) Marinate chicken with soy sauce, a pinch of pepper powder and egg ( egg white). Set aside for about 30 minutes.

2) Sift together flour, tapioca/cornstarch flour, baking powder, and salt.

3) Heat enough cooking oil in a wok or deep fry pan. Drag the chicken cutlets over the flour mixture, gently pinch it so the flour nicely sticks into the cutlets.

4) Make sure the oil is hot enough, dip a bamboo chopstick into the oil, if it's bubbling much, you are ready to go. Fry chicken cutlets until golden brown. Strain and lay them over paper towels.

Note: you can double fry the chicken twice to make it more crispy.

For the sauce:
🥣5-6 cloves of garlic, finely chopped
🥣5 cm ginger, finely chopped

🥣dried chili pepper ( I skip this)

🥣2-3 Tbsp vegetable oil

🥣2 Tbsp oyster sauce*
🥣1 Tbsp vinegar*

🥣1 Tbsp sesame oil*
🥣4 Tbsp soy sauce*
🥣4 Tbsp sugar*
🥣1 cup of water*

🥣2 tsp cornstarch*

Making the sauce

1) Mix all ingredients with mark (*). If using dried chili, Soak it in hot water a few minutes, then drain and roughly chop.

2) Heat vegetable oil in a wok/pan. Stir fry garlic and ginger until fragrant. Stir in chili (if using). Add in sauce mixture then stir continuously until the sauce gets thick and bubbling. Add in fried chicken and stir until all chicken covered by the sauce.

Remove from heat.

Sprinkle with sesame seeds and chopped scallion (optional).

Serve immediately with steamed rice and some vegetable. I enjoyed it with steamed broccoli.

"General Tso's Chicken" adalah hidangan ayam goreng yang biasa disajikan di restoran Cina di Amerika.

Walau hidangan ini sangat populer di AS, kamu mungkin akan terkejut mengetahui bahwa General Tso chicken ini sebenarnya tidak terlalu populer di Cina sendiri - dan bahkan tidak berasal dari daratan Cina.

Makanan ini terbuat dari ayam goreng tepung yang dimasak dengan saus agak asam dan manis, dan terkadang dibuat untuk versi pedas.

Biasanya disajikan bersama nasi putih dan sayuran tumis sederhana sebagai pendamping, umumnya brokoli.

Nah..hari ini saya akan posting makanan kesukaan saya ini. Kali ini saya bikin yang versi tak pedas, karena anak saya masih belum bisa makan yang terlalu pedas 👧

General Tso Chicken Recipe

Menjadi 3-4 porsi

Bahan dan cara membuat

Untuk ayam goreng
🥣 400 gr daging ayam tanpa tulang, potong kotak
🥣2 sdt soy sauce (kecap asin)
🥣sedikit merica bubuk
🥣1 telur ( atau ¼ gelas putih telur), koco*k lepas
🥣½gelas terigu
🥣½gelas tapioca/atau bisa pakai pati jagung
🥣1 sdt baking powder
🥣sejumput garam

🥣minyak goreng secukupnya

Cara membuat:

1) Rendam ayam dengan kecap asin, merica dan telur (atau putih telur). Diamkan kurang lebih 30 menit.

2) Ayak jadi satu: terigu, tapioka/ pati jagung, baking powder dan garam.

3) Panaskan minyak secukupnya. Balur ayam dengan campuran tepung, cubit-cubit agar tepung menempel. Goreng hingga matang. Tiriskan.

Note: jika ingin lebih renyah, ayam bisa digoreng dua kali.

Untuk saus:
🥣5-6 siung bawang putih, cincang halus
🥣5 cm jahe, cincang halus

🥣Cabe besar kering (saya tidak pakai)

🥣2-3 sdm minyak goreng

🥣2 sdm saus tiram*
🥣1 sdm cuka masak*

🥣1 sdm minyak wijen*
🥣4 sdm kecap asin*
🥣4 sdm gula*
🥣1 gelas air*

🥣2 sdt pati jagung*

Cara membuat

1) Campur semua bahan bertanda (*) diatas. Jika memakai cabe kering, rendam dulu dalam air panas beberapa menit, lalu potong kasar.

2) Panaskan minyak dalam wajan. Tumis bawang putih dan jahe sebentar, jangan sampai bawang putih hangus. Masukka cabe (jika pakai).

Lalu masukkan campuran saus diatas sambil diaduk-aduk sampai kental dan mendidih.

3) Masukkan ayam goreng lalu diaduk sampai rata. Matikan api. Beri taburan wijen dan daun bawang (optional).

Sajikan hangat dengan nasi dan sayuran tumis sederhana. Disini saya pakai brokoli saja.
