Gentleman's Relish, or Patum Peperium, was created in 1828 by an Englishman called John Osborn. This traditional Victorian spread is famous and secret! Even today the secret recipe is held by just one employee at Elsenham Quality Foods. Made of anchovies, butter, herbs and spices. It is salty and fishy and worth a go.
Gentleman's Relish is traditionally eaten thinly spread on slices of buttered white-bread toast, either on its own or with cucumber or cress. It can also be added to minced meat to enhance flavours or to the mixture for fish cakes.
