Whenever strawberries are plentiful, I like to use them in the kitchen as often as possible. I love them in sweet dishes like this Strawberry Tiramisu Angel Food Cake, but they are also amazing in recipes like this savory Strawberry Tomato Bruschetta Recipe!
Bruschetta is an “antipasto” or appetizer that usually consists of toasted baguette slices that have are rubbed with garlic, olive oil, and salt. From here, bruschetta can be topped with anything!
The variations I have made include Bruschetta Topped with Roasted Veggies, and this Goat Cheese and Honey Bruschetta. They are different from one another but equally delicious!
This recipe starts with a baguette, French bread, or any crusty, toasted bread that is cut on the bias.
Drizzle each slice generously with extra virgin olive oil, then place the bread on a baking sheet and place the bread in the oven. Bake just until the edges begin to crisp up.
While the bread bakes, work on the topping!

The topping for this homemade bruschetta is a take on my Strawberry Tomato Salsa.
In a bowl, combine ripe tomatoes (I used cherry tomatoes, but plum tomatoes are lovely as well). Just be sure you use fresh tomatoes.
Chop the tomatoes and toss them with fresh strawberries, flat-leaf Italian parsley, olive oil, balsamic vinegar, and salt and pepper to taste. You may be wondering about the tomato/strawberry combo. Think it’s a little odd?
I know strawberries and tomatoes seem like unlikely pairs, but they work well together.
You could also add fresh basil and garlic to the tomato mixture if you like.
Spoon the tomato mixture over the bread and place the bruschetta on a serving tray. This appetizer is best served at room temperature.
I like to add crumbled goat cheese to my bruschetta before serving. Feta or shaved Parmesan would be lovely paired with the tangy strawberries and balsamic vinegar.
Bruschetta Tips:
I already mentioned that you could add some fresh garlic and basil to this recipe.
You could also add fresh cucumber, red onions, shallots, or avocados.
You could make bruschetta with red wine vinegar instead of balsamic vinegar or perhaps use a balsamic glaze or reduction.
Cilantro can be used in place of the parsley.
Mozzarella, Brie, mascarpone or cream cheese could be used for this easy bruschetta recipe.

Yes! You can toast the bread in advance and store in an airtight container when cooled. Prepare the tomato mixture and store covered in the fridge. Assemble the bruschetta just before serving.

Strawberry Tomato Bruschetta Recipe

Ingredients
- 1 French Baguette
- 3/4 cup diced strawberries
- 3/4 cup chopped cherry tomatoes
- 2 tablespoons Italian leaf parsley
- 2 tablespoons olive oil, plus extra for drizzling
- 1 tablespoon balsamic vinegar
- salt to taste
- 2 tablespoon goat cheese
Instructions
- Preheat oven to 450.
- Slice the baguette on the diagonal into 1 inch thick slices. Drizzle each slice generously with olive oil. Lay bread slices, oil side down onto a baking sheet. Bake for 5 minutes or until the bread starts to brown. Remove bread to a serving dish (toasted side up).
- While bread bakes, combine strawberries, tomatoes, olive oil and vinegar in a small bowl. Season with salt (to taste). Spoon mixture over bread slices. Sprinkle with parsley and crumbled goat cheese. Serve immediately.
