Method

In a pot of boiling salted water, add the pasta and cook as per packet directions.

In a pan, heat olive oil and add mushrooms, carrot, and garlic and cook for 5 minutes until mushrooms are soft.

Add spring onions, keep a handful for garnish later and cook for a further 2 minutes.

Pour in sesame oil, soy sauce, vinegar and honey and mix. Once pasta is cooked, add to the pan and toss together.

Push pasta to one side of the pan and crack the eggs and cook in the pan for 3 to 4 minutes or until the yolk is soft and runny.

Divide noodles into 2 bowls and top with a fried egg and toasted sesame and reserved spring onions.

Serve and enjoy with family and friends!
